Macarons
Descriptions and ingredients:
Basic macaron outer shell: almond meal, egg whites, caster & powdered sugars.
Chocolate/orange ganache: A orange colored macaron filled with a rich, full flavored ganache. I love the combination of chocolate and orange. Ghirardelli 60% dark chocolate, heavy cream, fresh orange rind and zest.
Lime/basil buttercream: Bright green macaron with a light, fresh buttercream. heavy cream, fresh lime zest, fresh basil leaves, butter, powdered sugar.
Tiramisu: Speckled light brown shell dusted with cocoa powder filled a rich, luscious ganache. Great for an after dinner treat. heavy cream, Ghirardelli white chocolate, espresso powder, almond extract.
Lemon: Bright yellow macaron filled with a tart lemon curd. mascarpone cheese, homemade lemon curd (egg yolks, sugar, butter, cornstarch, fresh lemon juice and zest, salt)
Pistachio: Speckled yellow/green beauties sprinkled with pistachio pieces. butter, milk, almond extract, pistachios, egg, sugar, custard powder.
Raspberry buttercream: Pink macarons filled with raspberry buttercream. These are the least sweet of the berry macaron flavors. cream, butter, powdered sugar, raspberries, egg whites.
Pastry cream: This one is a basic pastry that can be colored to match your event. The filling begins with a light pastry cream and can easily be flavored to go with your other choices. cream, egg yolks, sugar, vanilla, butter, powdered sugar, whatever flavoring/additions you choose.

Chocolate covered cherries: Chocolate shell filled with sweet, dark cherry buttercream. Nice combination. cocoa powder, butter, black cherries, powdered sugar, heavy cream, vanilla extract
Baklava: A rich honey, white chocolate ganache laced with finely chopped walnuts. honey, Ghirardelli white chocolate, walnuts, cinnamon, nutmeg, cream
Limoncello: A light yellow shell filled with limoncello buttercream. Enough of my homemade 100 proof limoncello to make you ask, "What is that little kick I taste in the back of my throat?" butter, cream cheese, limoncello, fresh lemon juice, powdered sugar, vanilla
Raspberry & Pink Peppercorn: An amazing combination of tart and sweet with just the slightest kick of pink peppercorns in raspberry colored shells. butter, milk, sugar, pink peppercorns, raspberries, powdered sugar
Oatmeal Pie: Caramel buttercream filling surrounded by two oatmeal cookie shells. Definitely comfort food. shell: oatmeal and cinnamon added to regular ingredients. filling: butter, sugar, powdered sugar, egg, vanilla, cream, salt
Dolce's Peanut Butter Cup: A chocolate shell filled with a whipped peanut butter cream filling. cocoa powder, peanut butter, powdered sugar, butter, salt
Blueberry: Bright blue shells with a rich blueberry buttercream filling. butter, blueberries, heavy cream, vanilla extract, sugar, powdered sugar.
Carrot Cake: Shells with dehydrated carrots with a bit of cinnamon and nutmeg filled with maple cream cheese buttercream. butter, pure maple syrup, cream cheese, powdered sugar, vanilla.
Pomegranate Rose: Fragrant rose white chocolate ganache surrounded by two pomegranate shells. shell: freeze dried pomegranate added to regular ingredients. filling: cream, white chocolate, rose water, rose syrup (rose water, sugar, lime)
Pecan Pie: A seasonal favorite with caramel pecan filling. (November and December only) sugar, cream, butter, pecans
Pumpkin: Pumpkin ganache filled macarons for autumn and winter. (November and December only) white chocolate, cream, brown sugar, pumpkin puree, pumpkin pie spice
Holiday Peppermint: Christmastime red swirled peppermint macaron. (December only) white chocolate, cream, peppermint extract, cream cheese, crushed peppermint candy

Ravioli
Pasta dough for ravioli: Simple, classic - can't be improved upon. flour, eggs, extra virgin olive oil, salt
Gourmet Butternut Squash Ravioli: A light tender ravioli filled with a rich creamy filling. I serve this one with a browned butter and sage sauce. butternut squash, nutmeg, mascarpone cheese, egg yolks, parmesan cheese, salt & pepper
Spinach Ravioli: Full of cheese and spinach along with the unexpected crunch of toasted pine nuts. I like this ravioli with a vodka cream sauce, but a fresh marinara would be nice as well. ricotta, parmesan cheese, nutmeg, spinach, pine nuts, garlic, salt & pepper
Sun Dried Tomato Ravioli: This is a simple, sort of neutral ravioli that is a good one for serving with fancier sauces. ricotta, parmesan cheese, sun dried tomatoes, egg yolks, salt & pepper
Mushroom Ravioli: A hearty ravioli filled with a variety of mushrooms. I always use button, portabella, and porcini mushrooms, but will add any interesting ones that I find fresh at the moment. This flavor ravioli can handle a meaty bolognese sauce. extra virgin olive oil, garlic, onion, mushrooms, mascarpone cheese, ricotta cheese, chives, parsley, red pepper flakes, egg whites, salt & pepper
Shrimp Ravioli: This isn't a cheese ravioli with a bit of shrimp - this is a shrimp ravioli with a bit of cheese! Great with a basil cream sauce or some other light creamy topping. shrimp, garlic, butter, extra virgin olive oil, basil, parsley, chives, egg white, ricotta, salt & pepper

Sauces
Vodka Cream Sauce: A rich sauce that is a bit heartier than those I find at the store. extra virgin olive oil, butter, garlic, shallot, vodka, chicken broth, tomatoes, heavy cream, fresh basil leaves, Mauro herb mix (a mix that I get at Campo di Fiori in Rome, Italy - I'm not sure which herbs are in it), salt & pepper.
Basil Cream Sauce: This is similar in texture to an alfredo sauce, but lighter in taste. fresh basil leaves, white wine, garlic, heavy cream, parmesan cheese
Bolognese Meat Sauce: A classic, rich meat sauce. Great with thick tagliatelle, boxed dry pasta, or a hearty ravioli. oil, butter, onion, celery, carrot, ground beef, milk, nutmeg, white wine or chicken stock, tomatoes, salt & pepper , mauro herb mixture
