I had a little mini-ravioli tasting last night and it got me newly excited about developing this line. We tasted 3 different raviolis made with 2 different types of pasta dough and 3 different sauces. It was fun and informative. I have 2 ravioli fillings that were deemed perfect and one that needs some work. I promise everything will be fabulous before I offer it here at Dolce Mattina. Thanks Sam and Lucy for input and encouragement.
