After plenty testing and tasting, I am thrilled to begin offering ravioli to you. I will highlight 2 flavors each month that will be available to purchase in one pound bags for $10 per pound. January's two flavor offerings are butternut squash (A light tender ravioli filled with a rich creamy filling. I serve this one with a browned butter and sage sauce), and mushroom (A hearty ravioli filled with a variety of mushrooms. I always use button, portabella, and porcini mushrooms, but will add any interesting ones that I find fresh at the moment. This flavor ravioli can handle a meaty bolognese sauce). Other flavors will be available at the same cost, but with a minimum order of 4 pounds. There are also some sauces for those of you prefer to get a complete dinner.

I had a little mini-ravioli tasting last night and it got me newly excited about developing this line. We tasted 3 different raviolis made with 2 different types of pasta dough and 3 different sauces. It was fun and informative. I have 2 ravioli fillings that were deemed perfect and one that needs some work. I promise everything will be fabulous before I offer it here at Dolce Mattina.  The weather here in Florida has turned refreshingly crisp. I so love sitting out on my porch with a cup of coffee and a macaron (or two) in the cool of the day. My home is small and simple, but suits me just fine. I strive to live a simple, slow life. I have been perfecting the art of making French macarons and I find such joy in creating the perfect shape, texture, and flavor of these wonderful confectionaries. Eating them isn't half bad, either! Before I sell them to clients or gift them to friends, I would be remiss if I didn't taste one from each batch to ensure consistent quality.
